My name is Alejandro Guerrero
Born and raised amidst the vibrant landscapes and rich culinary traditions of Morelos, Mexico, Chef Alejandro Guerrero's passion for food was ignited at an early age. His first and most influential culinary teacher was his beloved grandmother, a true matriarch of the kitchen. From the tender age of five, Alejandro stood by her side, learning not just recipes, but the soul of Mexican cooking. He absorbed her techniques for nixtamalizing corn for perfect tortillas, the art of toasting chilies to unlock their smoky depth, and the subtle balance of spices that define authentic moles and salsas. His grandmother taught him that cooking was an act of love, a way to connect with family and heritage, and that the freshest, most vibrant ingredients were the secret to truly unforgettable flavors.
Growing up, Alejandro’s childhood was steeped in the aromas of his grandmother's kitchen: the fragrant steam from a pot of simmering beans, the sizzle of carnitas, and the earthy scent of masa. These formative years instilled in him a profound respect for traditional Mexican methods and a deep understanding of the diverse regional cuisines of his homeland. He mastered the art of grinding spices in a molcajete, understood the nuances of various chili peppers, and learned to trust his intuition as much as a recipe.
Now, as the head chef of Alebrijes Tacos, Alejandro pours his heart and soul into every dish. His cooking is a direct reflection of his upbringing – authentic, vibrant, and full of life. He relishes the opportunity to bridge cultures through food, finding immense joy in sharing the true flavors of Mexico with the people of Tokyo.
